    On this website you will accumulate incredible secret pizza making information. The recipe bellow will guide you step by step so that YOUR homemade pizzas will be EXACTLY as delicious as an original Italian restaurant stone oven pizza. 

    All this information is free of charge and you will learn different tricks and secret tips that no Italian restaurant pizza chef will ever tell you about.

    The pizza is EXTREMELY easy and quick to make and anyone can do them at home using an ordinary electric or gas oven. I do not belive that spices or a better oven will make your pizzas better, therefore the only recipe you will  see on this website will be a simple to make recipe and nothing else. These pizzas will absolutely amaze you if you follow this recipe.  Enjoy the pizzas and share these secrets with your loved ones.

 

DOUGH 1 pizza (2 people)

Add the ingredients into a bowl in following order.

1.    1 cup (3-4dl) finger warm water.

2.    1 table spoon of fresh yeast

3.    1 tea spoon salt (or no salt at all)

4.    Flour (amount depends on how you like your pizza, donīt worry, youīll get it right.)

STEP 1.    

    Blend all ingredients EXTREMELY well, untill the dough is more white than yellowish-white.  The amount of flower is not important as long as the dough is not hard or "runny". Trust me, I have done this almost a thousand times. Using a dough-blending machine it takes 7 minutes and will give you a perfect result.  

                                   

    Blend and ad the flower but not all at once!!! Do it in 3 or  more parts.  When the dough doesnīt stick to the wall anymore you know you have the right amount of flour in your dough, you can have less also and you can have more if you wish. Blend for about seven minutes. 

    Using your hands this procedure will take you probably an hour. This is the only and most difficult part in pizza making and is also the difference between ok pizza crust and the superb excellent pizza crust.  You can find old blending machines for under 30 dollars, this is an excellent investment if you dont have much spare time.  This is not difficult, just follow these simple instructions and you will be amazed.

STEP 2.    

 

Cover the dough and let it grow for at least 20 min. The longer you will let the dough grow the better it will get, however not longer than one day ( I have not tried longer) and for best result minimum one hour. There is a secret not to have to wait for the dough to grow for hours.  Put 2 tea spoons of baking powder into the dough mixture before you blend it all.  The pizza will have a slightly different taste and texture but will still compare to the absolutely best stone oven pizzas. You wonīt probalby se the difference.

STEP 3.   

During the time the dough grows you can prepare the topping, starting with the most important from top.

A.    Cheese and tomato sauce, enough to cover the pizza. Not too much and not too little.

B.     Ham or beef or both or mushrooms or all three or whatever you want, enough to cover the pizza, not too much and not too little..

Making the tomatoe sauce.

    The sause consists of tomatoes. You can make it of fresh tomatoes, just crush them or cut them with a mixer, mix the tomatoes with crushed tomatoes from a can and ad a teaspoon of sugar, salt or what ever spice you want, garlic is nice. This is the best way I belive.  I make the sauce from crushed tomatoes in a can or tomatoe pasta in a can which is cheap but not the most exclusive. I use only this and nothing else, not even salt and my friends cant even tell the difference.  I donīt warm the sause or spend any time making it, no cooking. By the way, it is not pasta, italian makaroni pasta.... OK

STEP 4.

    Set the oven to its' highest temperature but absolutely not higher than 360 degrees Celcius (680 degrees fahrenheit), or lower than 240 degrees Celcius (464 fahrenheit), for best result about 320-340 degrees celcius (608-644). But it all doesn't really matter.

  A.    Buy a pizza stone that fits nicely into your oven. It is cheap AND makes THE DIFFERENCE you all want to achieve. There is no other way! The pizza will still be excellent without the stone but it wonīt be even close to an original stone oven pizza. This is one of the greatest secrets in making the perfect pizza at home. Donīt worry, you don not need to buy anything else. The two only things you need to aquire for the perfect pizza is the dough-blending machine and the pizza stone.

1.    Put the stone in the oven and set the oven to its' highest temperature, not higher than 360 degrees (680 degrees fahrenheit).

 

2.    Take the dough and cut it in almost half. You can put the other half in the fridge and use it another time for a smaller pizza.

 

 

3.    Take the slightly larger piece and make it into a flat round piece. Use lots of flour.

      

4.    Put some flour at the bottom.

5.    Take out the stone and put it on something that can stand extreme HEAT! Close the oven FAST! Watch out the stone it very hot now!

6    Take the round flat pizza dough and place it on the stone, handle it quickly and carefully. Make it nice and round on the stone and flaten it out.         Watch out, the stone is still extremely hot.

 

 7.    Put the ingredients on top of the dough in the following order. 

            a. Tomatoe sauce

            b. Cheese

              

            c. Other toppings such as ham, paprika or mushrooms, chicken and onion. On this one I have chicken and mushrooms.

 

           From the time you take the hot stone out form the oven, to putting the dough on it and covering the dough with sauce, cheese and the other               stuff it should take you less than two minutes. So have it all prepeared!!

  8.    Place the pizza stone in the middle of the oven and close it QUICKLY!!. Set the oven for heating top and bottom.

 

9.    Watch the pizza as it grows and changes color.

 

STEP 5.

    The pizza is done when the cheese has melted, the TOP crust has a slightly white-brownish color and the BOTTOM crust is "crusty" and has color variations and small brownish or blackish spots. It all takes about 4, 5 or 6 minutes if the oven is set for at least 300 degrees Celcius or 572 degrees Fahrenheit. Do not leave the pizza in the oven too long otherwise it will dry out. If you are using the pizza stone this process goes quicker than without the stone. You can cut the pizza crust while it is in the oven to check if the dough is done if you are unsure, and if you have a choice do not open the oven during this time at all. Donīt worry, youīll get the hang of it!

This pizza had an extremely crusty crust and was a piece of art. This pizza was in my old electric oven for 5 minutes. The pizza stone helps the oven to keep and to distribute the heat as it sucks the moist from the bottom and makes the pizza crusty. Make sure to have some flour on the bottom of the dough so it wonīt stuck to the stone before you put the dough on the HOT stone.

IMORTANT!

The more ingredients you put on the pizza the slower the cheese melts.

Do not put too much sauce otherwise you will have to clean your stone or your oven. If you get sauce on the stone it will get ruined.
